I really enjoy the bagpipe original version of Scotland the Brave. It seemed pretty exciting to adapt a bagpipe style accompaniment to a choir singing. If you use the 3 stops of voice celeleste, nasard, and oboe for the swell and common flute stops for the great pedal with no crescendo, raise the volume, you can make it sound like a bagpipe on the right hand while having organ sounds on the left hand. I would leave trombone pedals out of the foot pedal stops.
